culinary philosophy

We work with the purest ingredients and let them speak for themselves, only adding a flourish— pure oil to accentuate; aging to concentrate flavor and create tenderness, and seasonal herbs to highlight the time of year.

We work from a classic culinary repertoire, elevating familiar dishe sand favorite flavors. We seek out the best local ingredients when possible— succulent peaches from nearby Fredericksburg, Meyer lemons and pink grapefruits from local farms and to create those rich smoky notes, hardwoods from the Texas Hill Country.
